Meet Peter
Position: Owner
Tell us a little bit about you and your experience: I’ve been in hospitality for the past 10 years. Like every uni student I needed to pay my way so I got a few bartending jobs. In 2018 I opened Tandem, my Scandi inspired cocktail bar in Newtown, which had to close due to COVID. But now I’m back in my home town and looking forward to bringing some quality services and a unique food and drink experience to Glen!
What do you enjoy in your time off? I really enjoy learning the background behind flavour combinations and experimenting with different cocktails. On my days off you’ll find me with a coffee (or beer) in hand at a nice café reading a book or playing tennis.
What is your go-to Coffee? Large Cappuccino!
If you were a spice what would you be? Cinnamon – I’m a lot of fun but in small amounts.
Meet Kate
Position: Owner
Tell us a little bit about you and your experience: This is actually my first hospitality job, my background is actually in engineering which is where I met Peter. We’ve always wanted to move back to Glen Innes where we can be part of the community so I’m loving that COVID has fast tracked this and I’m learning so much everyday!
What do you enjoy in your time off? I I’m from the Central Coast originally so I love visiting the beach and going for bushwalks. I’m an avid Wests Tigers fan and absolutely love our new Great Dane puppy Mr Henri.
What is your go-to Coffee? I’m actually a tea girl. I love a good English Breakfast Tea but If I do have a coffee is a Decaf Almond Cappuccino.
If you were a spice what would you be? Apparently I’m Cumin. I’m not always noticeable but when I’m missing things tend to fall apart.
Meet Tom
Position: Chef
Tell us a little bit about you and your experience: My love for food goes all the way back to when I was 7, I used to join my mum and her best friend on trips to the Hunter Valley where I started to grow my appreciation for food. Since then I have gone on various adventures to further my skills, moved out of home at 16 to start an apprenticeship and now back in Glen Innes where I can work with the unique flavours in the region.
What do you enjoy in your time off? I think that’s an obvious one, I love trying out new foods and drinks. I also love foraging and sharing these adventures with my closest friends and my dog Betty.
What is your go-to Coffee? Depends, if it’s a weekend I’d say Irish but I do love an iced latte on oat milk to get me through a shift.
If you were a spice what would you be? Sumac – when used right it’s awesome, but terrible if used in the wrong place
Meet Tasha
Position: Barista
Tell us a little bit about you and your experience: I grew up in Glen and as soon as I could get a job I started in Hospitality which was around 10 years ago now and I've been making coffees for 8!
What do you enjoy in your time off? I love photography, I've even been lucky to bring in my gear and take some photos in the café that got featured in Downtown Magazine.
What is your go-to Coffee? A cappuccino on Lactose Free milk ... with three sugars. I like it sweet haha
If you were a spice what would you be? Can sugar be a spice? I'm pretty sweet so I'd say vanilla!
Meet Kira
Position: Cook and Baker
Tell us a little bit about you and your experience: I was born in Glen Innes and have been in hospitality forever! While I’ve tried a few other things I keep coming back to hospitality which isn’t surprising given my love for baking sweet treats!
What do you enjoy in your time off? I love my little family, farm, and being a plant mum. I also love baking all things sweet as well as sowing, craft and wearing statement earrings.
What is your go-to Coffee? Oh that’s tough, maybe a classic latte but I’m also a Chai girl.
If you were a spice what would you be? I’ve been told I’m salt – your dish would lack pizazz without me.
Meet Chuck
Position: Chef
Tell us a little bit about you and your experience: While I was born in Glen I spent most of my life in Coffs Harbour. My first job was in hospitality almost 10 years ago. I always loved food and helping pout in the kitchen so becoming a chef seemed like the obvious option.
What do you enjoy in your time off? Right now I'm still heading back and forth between Glen and Coffs, but when I do get some time I love spending it in the garden or just chill with a few friends.
What is your go-to Coffee? I like to keep it simple with a flat white.
If you were a spice what would you be? Juniper - I add a little bit of fun to the kitchen.
